White Sauce

This sauce can be used as a base for many things, including chicken and biscuits, or macaroni and cheese. 

1 cup milk 
2 tablespoons butter
2 tablespoons all-purpose flour (or 1 tablespoon corn starch)
1/4 teaspoon salt
pinch of black pepper
pinch of ground nutmeg

Place milk in a small saucepan and heat over medium-low until hot but not boiling. (You will see steam rising off the surface of the milk.) Turn off heat and pour milk into a liquid measuring cup.  Set aside. 

In a medium saucepan, melt the butter over medium-low heat.  Add the flour to the butter and use a wire whisk to blend until smooth and slightly bubbly.  Slowly pourthe milk into the mixture.  Whisk the mixture to blend. (You don't have to add all the milk at once.)  Once all of the milk has been added, continue to whisk over a medium-low heat until you have a smooth white sauce.  Stir in salt, pepper, and nutmeg.  Serve warm. 

Makes 1 cup
