Banana Bread

Bake at 350°     
  
1¾ cups flour (white or wheat)   
2¼ teaspoons baking powder      
½ teaspoon salt                          
⅓ cup shortening                        
⅔ cup sugar             
¾ teaspoon lemon rind (optional)     
1-2 beaten eggs              
1-1¼ cups banana pulp
½ cup chopped nuts


Sift together flour, powder, and salt.  Blend shortening, sugar, and lemon rind together.  Add to this mixture eggs and banana.  Add dry mixture to wet mixture.  Add nuts if desired.  Place batter in greased bread pan, and bake for about 1 hour.
