Thai Peanut Noodles

1 c. chicken broth
6 Tbsp. Adam's natural crunchy peanut butter
4 tsp chili powder (or more to taste)
3 Tbsp. honey (5-6 Tbsp. if using Adam's natural)
6 Tbsp. soy sauce
3/4 Tbsp. ginger powder (1 1/2 Tbsp. fresh minced ginger)
3/4 tsp garlic powder (2-3 cloves garlic, pressed or minced)
5 Tbsp. lime juice (or 2 fresh limes cut into quarters)

8 oz. Udon or linguine noodles or 2 cups brown rice
*Chopped green onions
*Chopped cilantro
*Chopped peanuts

1 chicken breast
1 bag frozen brocolli stir fry veggies (add bag of frozen broccoli for more veggies)

Cook noodles or rice according to directions. 

Cook chicken and cut into small strips.  Steam vegetables. 

In the meantime, combine chicken broth, peanut butter, chili sauce, honey, soy sauce, ginger, and garlic in a small saucepan over medium-low heat. Whisk until smooth and remove from heat (thickens sauce) and add chicken, veggies, and lime juice.  Serve with cooked noodles/rice. 

Sprinkle each serving with green onions, cilantro, chopped peanuts, and garnish each serving with 2 lime quarters (if not using juice).
