Zucchini Bread

Bake at 325°     

3 eggs                                    
1 cup oil                                    
2 cups sugar                              
2 cups grated zucchini                         
3 teaspoons vanilla    
   3 cups flour (white/wheat)   
1 teaspoon salt        
 1 teaspoon baking soda 
3 teaspoons cinnamon    
  ¼ teaspoon baking powder
½ cup walnuts (optional)

Beat eggs until light and foamy.  Add oil, sugar, zucchini, and vanilla.  Mix lightly but well.  Add dry ingredients sifted together. Mix until blended.  Fold in nuts.  Divide batter and pour into 2 loaf pans.  Bake about 1 hour.
