cups rolled old fashioned oats (not quick oats)

cups unbleached all-purpose flour

cup plus 2 table spoons granulated sugar

teaspoons baking powder

teaspoon ground cinnamon
1 teaspoon
salt

large eggs, lightly beaten
¾
cup vegetable oil
1
cup 1% cottage cheese
2
cups reduced-fat milk
Combine
the oats, flour, sugar, baking powder, cinnamon, and salt in a large mixing
bowl. Stir to combine. Stir in eggs, oil, cottage cheese and milk,
one at a time until mixture is smooth.
Let batter rest 5 minutes before using.
Preheat
waffle maker. Pour 1-2 cups mix into
waffle maker to cook. Repeat using
remaining batter. Makes 12 waffles.
My sister, Heather, visited me a few days after having my first child and she made me these. They were yummy and very filling!
