Carrot Cake

Oven at 325º

2 cups sugar
4 eggs
1 teaspoon salt
2 teaspoons cinnamon
½ cup chopped walnuts
1 ¼ cup oil
1 teaspoon baking soda
3 cups grated carrots
2 cups flour

Beat sugar, eggs, and oil. Sift in dry ingredients. Add eggs, carrots, and nuts. Bake for 1 hour. Cover with cream cheese frosting.

(My mom and dad always make this cake in the shape of a baby buggy for baby showers!  For Mom and Dad's famous baby carriage cake, make a circular cake, cut out a 1/4, and frost like a baby carriage complete with a doll head, doughnut wheels, and a carriage handle.)
