Russian Cream

Makes 6 servings if poured in the disposable 9 oz. clear serving cups.

¾ cup sugar
1 envelope Knox gelatin
½ cup water
1 cup whipping cream
1 ½ cup sour cream
1 teaspoon vanilla
fresh berries (strawberries, blueberries, raspberries, etc)

In a large saucepan, combine sugar, gelatin, and water. Mix well, then let stand for 5 minutes. Bring mixture to a full boil, stirring constantly. Remove from heat and allow to cool. Pour in whipping cream; set aside. In a large bowl, blend sour cream and vanilla. Gradually beat in sugar mixture with a wire whisk until mixture is smooth. Pour in serving cups. Chill for at least 4 hours. Top with fresh berries.
